Some will take a seat not far from the superb glassed-in cellar, which gives just a glimpse of the 750 wine references stored in the basement. Others, seeking a more discreet setting, will take refuge in the private lounge with its majestic fireplace. Not to mention the outdoor terrace (with wheelchair access) which, in fine weather, is a real hit with bookers.
Welcome to Le Verbois, a Michelin-starred restaurant steeped in history!
The atmosphere
"There's no fuss here! We have a clientele of regulars, some of whom have become close friends", explains Laurent Guibet. With his wife Laurence, a sommelier, the former chef orchestrates a warm and personalised service in the dining room. Everything to optimise the culinary adventure proposed by their son Guillaume. So come in, choose your table, let yourself be guided, relax... The experience can begin!
The setting
Leather and metal armchairs, a few animal skins on the backrests, varnished wooden tables, designer crockery... Having worked in the establishments of Jacky Ribault, Bernard Loiseau and Guillaume Sanchez (NESO), interior architect and decorator Caroline Tissier has transformed this former hunting lodge nestling in the heart of the woods into a haven of voluptuous elegance, between tradition and modernity. The two impressive verandas offer guests a breathtaking view of a lush garden illuminated by a succession of flowers throughout the year.
The Chef
Guillaume Guibet is a magician. He transports you to the four corners of the world without ever leaving the kitchens of his Picardy restaurant. No wonder. This native of the region is a concentrate of influences picked up on his travels, from Asia to Latin America. On the plate, the journey is complete. His bold, subtle creations earned him his first Michelin star in January 2021. Guillaume was 25 at the time. But it was well before that that he began to write his destiny as a chef. At the age of 7, he enjoyed putting bread on the tables in the family restaurant. At 9, he spent more time making shortcrust pastry than doing his homework. The next step became obvious.
