The Guibet family welcomes you for a moment of gourmet cuisinein a former hunting estate with a contemporary design, now home to the restaurant Le Verbois, rated 1* in the Michelin Guide.
As soon as you step through the large black gates, you are struck by the beauty of the building, a former hound hunting lodge, set in a wooded setting. In front, a terrace with designer furniture welcomes us in season. Behind, the kitchen garden, the chef's pride and joy, and ducks, hens and other poultry add an authentic touch to the peaceful surroundings.
A few steps down the stairs and we are greeted by a family who have made this establishment famous: Laurent and Laurence welcome us and lead us to our table, in a luminous veranda, a contemporary décor in noble materials, signed Caroline Tissier. A splendid wine cellar, orchestrated by Laurence, sets the tone: this is the home of fine gourmets.
Moving on to chefThe young chef, I should say: only 25 years old, and already a great experience in a 2 Michelin star restaurant in Paris, the Kei Kobayashi, from which he remembers the fusion of Japanese and French culture. His time in this famous Japanese restaurant is reflected in our dishes. But we'll come back to that later. The chef is GuillaumeLaurent and Laurence's son. He grew up here, at Le Verbois, surrounded by his grandparents, who were the original owners of the establishment, and his parents, who were passionate about haute cuisine. His father, who trained at some of the greatest restaurants, including Fouquet's in Paris and Negresco in Nice, passed on his passion to him, and then his chef's hat.
Back to our plates. They are beautiful. It really is. There's colour, a mix of textures, it crunches and melts in your mouth at the same time, it makes your eyes widen and brings a smile to your face. And it's good, very good. We discover flavoursThe ingredients, some typical of Japan, others very French but so forgotten...
In fact, it's a real experience. And the Découverte menu, at €59 (excluding drinks) per person (aperitif, starter, main course, cheese and dessert) is an excellent way to discover and appreciate the talents of the Guibet family.
